Banana Oat Biscuits

Grab and Go Breakfast

A delicious crunchy biscuit without flour, sugar or butter? It is possible! Quick and easy, these can be whipped up using only one bowl. I love the combination of bananas and dates, and a little cinnamon and nutmeg add the perfect bit of spice. They make a great breakfast on the go! The goodness of oats, bananas and coconut oil will keep you performing at your best. Try one with your morning cup of tea 🙂

Makes approximately 12 biscuits.

Ingredients

20140326-101908.jpg2 small ripe bananas, mashed (approx 1/2 to 3/4 cup)
1 cup quick oats
1/4 cup flaked coconut (or desiccated coconut)
1/4 cup chopped dates
2 tablespoons honey
1 tablespoon coconut oil
pinch of salt
cinnamon and nutmeg to taste

Method

Preheat oven to 160C. Line a tray with baking paper. Combine all ingredients except the dates in a bowl and set aside for about 10 minutes to allow the oats to soften.
Stir through the chopped dates. Place tablespoons of the mixture on the baking tray and flatten out. Bake for approximately 25 minutes to get a nice soft biscuit, or bake a little longer for a crisp cookie.
Allow to cool, and store in an airtight container. They will keep for about 5 days. Enjoy!

    1. You could try swapping it out for ground almonds or walnuts, sunflower seeds, linseeds or even just use extra oats! Let me know how you go, I’m sure you’ll come up with a creative solution! 🙂
