A Breakfast Treat
These sweet little cookies pair beautifully with a morning cup of green tea! The almonds and chia seeds provide great protein content, making these cookies a healthy breakfast treat 🙂
Ingredients
1 cup almond meal
1/2 cup desiccated coconut
2 tablespoons chia seeds
1 tablespoon boiling water
1/2 teaspoon bicarb soda
2 tablespoons maple syrup
1 tablespoon butter (I used Nutelex, a dairy free alternative made with olive oil)
1 teaspoon grated orange zest
pinch sea salt
Method
Preheat oven to 160C and line a cookie tray with baking paper.
Combine dry ingredients in a bowl. Mix the bicarb soda with the boiling water and pour into the dry ingredients as soon as it begins to froth. Stir through the rest of the ingredients and mix well to combine.
Roll heaped teaspoons of the mix into balls and press flat with your fingertips onto a lined cookie tray. Bake at 160C for approximately 15 minutes, or until cookies turn a delicious golden brown.
The cookies will crisp up as they cool. Enjoy!
