Gluten Free Bread Alternative
On a gluten free diet, I am always on the look out for healthy alternatives to bread. I love this recipe because it is uses steamed sweet potato and coconut flour to create a moist bread that is high in fibre and full of vitamins. This recipe is also completely gluten and grain free!
Ingredients
1 cup steamed sweet potato
1/2 cup coconut flour
3 eggs
3 tablespoons rice milk
2 tablespoons lemon juice
1 teaspoon bicarb soda
pinch cinnamon
pinch salt
Method
Preheat oven to 170C. Line 4 x 1cup ramekins with baking paper.
Blend the steamed sweet potato in a food processor. Add in all other ingredients and mix well to form a smooth consistency. Spoon the mix into the lined ramekins and bake for approximately 1 hour. Test with a skewer to ensure they are cooked right through. Turn out onto a wire rack and allow to cool completely before slicing.
Serving Suggestion
These taste great cut in half and served with honey and some ricotta cheese for breakfast! I also love them sliced and toasted, topped with avocado and chives for a healthy lunch at the office.
